Allergens & food safety
Allergen management you can trust
Record allergens once, on the ingredient. CulinaryCube derives them for every recipe, menu and offer.
What CulinaryCube does for you
The statutory 14
The fourteen allergens of EU Regulation 1169/2011, Annex II, are built in and cannot be removed. You can add your own.
Five states, not yes or no
Contained, traces, cannot be ruled out, not assessed, not contained. “Not assessed” and “cannot be ruled out” are different work, so they are different states.
Derived automatically
A recipe carries the most serious status of any of its ingredients, including those in base recipes. Correct an ingredient, and every recipe shows it.
Pinned where it matters
When an offer is issued or a menu is set for an event, the allergens are recorded as they were at that moment.
HACCP documentation
Records, control points and schedules for HACCP are in development.

Frequently asked questions
Can CulinaryCube print allergen labels?
Not yet. Today it records and derives allergen information for every recipe, menu and offer.
What if a supplier's specification is missing?
Mark the allergen “cannot be ruled out” or leave it “not assessed”. Both are shown on every recipe that uses the ingredient, so nothing is silently treated as allergen-free.
Can I add allergens or dietary information of my own?
Yes. You can add your own allergens beside the statutory fourteen, and record dietary information such as vegetarian or vegan.
